Dairy Free Flapjack

by Laura

Flapjack is one of those easy to make treats, that tastes good, and is ridiculously easy to make! I have adapted a Be-Ro recipe I found, swapping in and out some of the ingredients until I got the flavour and crunch I wanted- I like my flapjack crunchy!

100g Pure Dairy Free Spread
1tbsp Golden Syrup
100g Sugar
50g Oats
50g Self Raising Flour
75g Crushed Crunchy Nut Cornflakes

1. Melt the Pure and syrup gently.
2. Mix the dry ingredients, pour on the margarine mixture and mix well.
3. Spread evenly in a greased tray and press the mixture down firmly (I used the back of a large desert spoon)
4. Bake at 190°c, gas mark 5 for about 20 minutes.
5. Cut whilst warm

If I were making them again, a nice touch would be a drizzle of some Dairy free chocolate over it (I would recommend the Milk-Free Milk chocolate from Hotel Chocolat which tastes amazing once melted down. I think this would be good for decoration, as well as adding a touch more flavour.
