Enjoy Life Soft Baked Cookies
Double chocolate brownie- these are dairy free, nut free, soy free, gluten free- free of the main 8 allergens. These didn’t impress me at all to begin with, I found them too doughy, but once I tried popping them in the microwave for 20-30 seconds, they were then so tasty! They were now chewy on the outside and gooey on the inside- how a perfect cookie should be! The chocolate chips had melted and were molten within the brownie. I wouldn’t recommend them straight out of the packet, but they’re a real game changer once they’re warmed up!
Almotti Al Cocco Coconut Cookies
I found these at a farmers market in Miami, tried some tasters and was immediately hooked. They are little coconut macaroons, free from gluten and dairy (other flavours were free from egg) and are really delicious, chewy on the outside and soft and coconutty on the inside, these are a real treat. They ship within the U.S.A so you can order online if you are within the country, I would highly recommend!
These Grandma’s Peanut Butter cookies I found whilst scouting around Walmart looking for a tasty snack to take to the beach. They’re really tasty (as long as you like peanut butter) and are really nice and moist, they aren’t a crumbly biscuit at all. I love the idea of peanut butter as a fat instead of butter, firstly as it makes it suitable for those dairy free amongst us, and also, it adds more flavour, watch this space for more peanut butter inspired recipes!
