Rudolph The Vegan Reindeer..

I’m well and truly in the Christmas spirit at this point, and thought these reindeer and star shortbread biscuits would look great in my cookie jar. These are so simple to make- only 4 ingredients go into them!
You will need:
★ 100g Caster sugar
★ 200g dairy free butter (I think Pure is the best, especially for baking)
★ 300g Plain flour
★ Few drops of vanilla extract
★ Cookie cutters in whatever shape you’d like!
Optional (For decorating)
★ Icing sugar
★ Sprinkles- I used red, silver and green
★ Red food colouring- for Rudolph’s nose!
★ Rub the flour and the DF butter together until they’re breadcrumb-y
★ Mix in the sugar and the vanilla extract
★ Work this all together until it forms a dough
★ Wrap the dough up in some cling film and chill it in the fridge for an hour
★ Pre-heat the oven to 130˚C
★ Roll out the dough until it’s about 1cm thick
★ Cut out your shapes and place on a baking tray (that is lined with greaseproof paper!)
★ Bake in the oven for around 20-25 minutes, until they’re a light golden brown
★ Decorate however you like- I went for a mixture of icing sugar and sprinkles, and a dusting of icing sugar
